Summertime isn’t complete without having a side of Cajun-Style Crispy Onion Rings to complement a big juicy burger cooked on a charcoal grill in my families eyes. These Cajun-Style Crispy Onion Rings actually are good with almost any summer meal.

Oddly many folks who hate raw onions in recipes, seem to love onion rings for some reason; in my own son’s words, ” I love me some onion rings… but if you attempt to put an onion on my burger, I’ll kick your butt.”cajun-style-crispy-onion-rings

The actual invention of our deliciously crispy onion rings is actually unknown…

  • John Mollard’s 1802 cookbook “The Art of Cookery Made Easy and Refined”  includes a recipe called “Fried Onions with Parmesan Cheese.” The recipe suggests cutting onions into 1/2″ rings, dipping them into a batter made of flour, cream, salt and pepper, and Parmesan cheese, and then deep-frying them in “boiling” lard. It further suggests serving them with a sauce made of melted butter and mustard.
  • In 1910, a recipe for French Fried Onions appeared in the Middletown, New York Daily Times on 13 January 1910. It does not claim to be the originator of the recipe.
  • Another claimant to the invention of the onion ring is the Kirby’s Pig Stand restaurant chain, founded in Oak Cliff, Texas, in the early 1920s.
  •  In 1933, a recipe for deep-fried onion rings that were dipped in milk then dredged in flour appeared in The New York Times, the advertisement was for the company Crisco.
  • The restaurant A&W is credited with popularizing the onion rings in fast food restaurants, introducing it to its menu in the 1960s.


One of the best tips I can give y’all about draining your Cajun-Style Crispy Onion Rings is letting them rest on a bakers rack to drain off the excess peanut oil; it lets air hit both sides of the Cajun-Style Crispy Onion Rings to keep them nice and crispy.


Making your own Cajun-Style Crispy Onion Rings has never been easier than this simple easy to follow recipe that uses ingredients most people already have on hand in the refrigerator and pantry. These Cajun-Style Crispy Onion Rings pair well with burgers, fish, chicken, and even ribs.



  • 3 large yellow onions, cut into 1/2-inch rings
  • 2 and 1⁄4 cups of self-rising flour
  • 1⁄4 of a cup yellow self-rising cornmeal

  • 1 tablespoon Slap Ya Mama Original Blend Cajun Seasoning
  • 1 teaspoon of oregano
  • 1 teaspoon kosher salt
  • freshly ground black peppercorns to own taste
  • a pinch of ground cayenne pepper
  • 2 cups of your favorite beer
  • a  couple of dashes of Tabasco sauce
  • 1 large egg, lightly beaten
  • peanut oil for frying onion rings


  1. Place the sliced onion rings in an ice bath, place in refrigerator while in the ice bath for about 25-35 minutes
  2. In a medium bowl combine the self-rising flour with the cornmeal, Slap Ya Mama Original Blend Cajun Seasoning, oregano, kosher salt, freshly ground black peppercorns, and a pinch of ground cayenne; mix to combine dry ingredients.
  3. Add in your favorite beer, a few dashes of Tabasco sauce, and a lightly beaten egg; combine thoroughly until a smooth batter is formed; refrigerate the batter for 30 minutes.
  4. Drain the onion rings of excess water from the ice bath then place on a baking rack; pat dry with clean paper towels if needed.
  5. Dip the onion rings into the batter coating well on both sides.
  6. Heat 3-inches oil in a cast iron skillet to about  375 degrees.
  7. Drop the onion rings a few at a time into hot oil and fry until golden brown on both sides.
  8. Drain the Cajun-Style Crispy Onion Rings on a baking rack.
  9. Serve hot with your favorite dipping sauce
  10. Enjoy!

Parmesan Grilled Corn

Parmesan grilled corn spiced up with Slap Ya Mama Original Blend Seasoning is the perfect addition to any BBQ.



Preheat grill to 400 degrees F.

In a bowl, combine ¼ cup parmesan cheese, butter, thyme and Slap Ya Mama Original Blend Seasoning. Mix well and set aside.

Using a large sheet of foil, create a tray for the corncobs to sit in. Lay corn flat inside foil tray. Coat corn with the butter mixture, making sure the corn is entirely covered. Using the foil tray and more foil, tightly wrap corn into a foil pack, making sure there are no holes in the foil pack.

Place foil pack on grill and cook for 35 to 40 minutes or until corn is fully cooked.

Carefully open foil pack, sprinkle remaining parmesan cheese over the corn and top with chopped parsley.

Serve and enjoy!

Crispy Oven Baked Parmesan Garlic Fries

Crispy Oven Baked Parmesan Garlic Fries

Crispy, spicy and topped with Parmesan cheese, these fries are Slap Ya Mama good!



Cut potatoes in thin slices, about 1/4” thick. Add fries into a large bowl of water and let soak for at least 30 minutes. If you plan to soak them for longer than 30 minutes, place bowl in the refrigerator. You may soak as long as overnight.

After fries have soaked, drain and rinse then spread over a paper towel lined cooling rack. Use more paper towels to pat fries completely dry.

Preheat oven to 400 degrees F.

Line a baking sheet with either parchment paper or foil and spray with a non-stick spray.

In a large bowl, combine fries, 1 tsp Slap Ya Mama Original Blend Cajun Seasoning, garlic and olive oil. Mix well, making sure every fry is cover with olive oil and seasoning.

Spread the seasoned fries evenly across the baking sheet, making sure that no fries overlap each other. Bake at 400 degrees F for 15 minutes, turn fries and continue baking at 425 degrees F for another 30 minutes, turning fries once more during those 30 minutes.

While fries are baking, in a small bowl, combine the remaining Slap Ya Mama Original Blend Cajun Seasoning and Parmesan cheese

Sprinkle baked fries with the Parmesan seasoning mixture and top with chopped parsley. Serve immediately and enjoy!

Seafood Stuffed Potato with a Creamy Crawfish Sauce

This is the BEST stuffed potato you will ever eat! Stuffed with crawfish and shrimp then topped with a creamy sauce and more crawfish…you might fall in love with this Seafood Stuffed Potato. Mmmmm!

Potato & Stuffing:



  1. Rub baked potatoes lightly with olive oil and season with salt if desired. Wrap each potato with aluminum foil and bake in a pre-heated oven at 400 degrees F. until the potato is tender to the touch and you can stick a toothpick through it with no problem. This should take about 1 hour and 20 minutes. Remove potatoes from oven and let sit for 30 minutes before removing the foil.
  2. Peel shrimp, leaving tail on, and place in a small bowl, set shells aside for stock. Season shrimp to taste with Slap Ya Mama Original Blend Cajun Seasoning and let rest for 10 minutes. Meanwhile, add 4 cups of water and shrimp shells into a medium-sized pot over medium heat and allow the stock to simmer until you have reduced the liquid by half. Set aside. Note: For more flavor in your stock, you can add a chicken bouillon cube or 2 teaspoons of Slap Ya Mama Original Blend Cajun Seasoning.
  3. In a medium-sized skillet over medium-high heat, add cooking oil. Heat oil until hot, add shrimp and sauté until pink all the way through. About 2 to 3 minutes on each side, making sure you are turning the shrimp so it cooks evenly on all sides. When done set aside in a bowl and let cool for easy handling.
  4. Slice the potato along the middle; be sure not to cut in half. Using a spoon create a pocked in the potato. Add about 4 to 5 crawfish to each potato and divide the shrimp amongst potatoes, leaving the tail of the shrimp hanging out. Place potatoes on a baking sheet and set aside.

Sherry Cream Sauce


  • 2 tbsp unsalted butter
  • 2 large garlic cloves, minced
  • 2 medium shallots, diced
  • ¼ cup brandy, flambéed (ignite) is optional
  • 2 cups sherry wine
  • 1 cup shrimp stock
  • ¼ cup crawfish juice, drained from crawfish packaging
  • 1 cup heavy whipping cream
  • ½ cup crawfish tail meat
  • ½ cup green onions, sliced for garnish


  1. Preheat oven to 400 degrees F.
  2. In a saucepan over medium-high heat, add 1 tablespoon of butter, garlic and shallots. Sautee lightly for about 2 minutes; add brandy and flambé (ignite), stirring constantly. Add the wine, shrimp stock and crawfish juice and reduce by half. Add heavy whipping cream and continue cooking. When the sauce is at a smooth consistency, stir in remaining butter and mix well. Add remaining Crawfish tail meat and cook for another 2 minutes. (The sauce should have the consistency of Alfredo Sauce.)

Hint: If sauce is too thick, thin it out with a little chicken broth. If sauce is too runny, thicken it by adding more heavy whipping cream until the desired consistency is reached.

  1. Spoon some of the sauce over each potato then top with the cheese.
  2. Bake the potatoes in the oven at 400 degrees for about 6 to 8 minutes or until the cheese is golden brown.


Divide the sauce amongst 4 plates, spooning it directly onto the middle of the plate. Add the baked potato to the center of the plate then spoon a generous amount of sauce over each potato and garnish with the green onions. Enjoy!

Preheat oven at 425 degrees F.

In a large bowl, mix together brussels sprouts, onions, olive oil and Slap Ya Mama Low Sodium Blend Seasoning. Spread evenly into an oven-safe skillet or baking sheet.

Roast for 25 to 30 minutes, stirring only once. The brussels sprouts should be tender and slightly browned. Remove from heat.

In a small bowl, mix together balsamic vinegar, honey and creole mustard. Drizzle over roasted brussels sprouts and gently mix. Serve and enjoy!

Fresh Green Beans sautéed with fresh garlic and Slap Ya Mama seasonings, making these Creole Green Beans the perfect side dish.

  1. Using a large skillet, heat the butter until nice and hot on a medium-high heat.
  2. Place the green beans into the pan and toss lightly so that all green beans are covered in butter. Cook for about 1 minute then season the green beans with Slap Ya Mama Original Blend Seasoning.
  3. Cook for another 2 minutes and add seasoning again. Taste the green beans and add seasoning according to your taste.
  4. Add garlic and cook for another 2 to 3 minute or until slightly softened.
  5. Remove from heat, serve and enjoy.

Note: Make sure you do not cook the green beans all the way. You must cook it lightly so that it still has its crunch and maintain their national value and texture.

Serve on the side of your favorite protein & starch.

Mama’s Cajun Cornbread

Mama’s Cajun Cornbread

This recipe is very special to us because it is our mother’s recipe. Of all her recipes, Mama’s Cajun Cornbread is probably her most recognized recipe. Any time there is a gathering or some sort of family event, she makes her famous cornbread and it isn’t long before the whole tray is gone. You have to move quickly when she places her cornbread on the serving table or you’ll come up empty-handed. We have a feeling your family and friends will have to do the same if you bring this dish to your next gathering. Enjoy!


  • 1 cup smoked tasso or smoked ham, diced
  • 1 cup smoked sausage, diced
  • 1 cup yellow cornmeal
  • 1 Tbsp. Slap Ya Mama Original Blend Seasoning
  • 1 tsp. baking soda
  • 1 cup milk
  • ½ cup vegetable oil
  • 1 can cream style corn (14.75oz)
  • 2 eggs, beaten
  • 10oz mild cheddar cheese, shredded
  • 3 jalapenos, diced
  • 1 onion, diced
  • 1 bell pepper, diced


Preheat oven to 350 degrees Fahrenheit.

In a mmedium-sizedpan, sauté tasso and sausage over medium heat for about 3 minutes or until browned. Set aside.

In a large bowl, combine cornmeal, Slap Ya Mama Original Blend Seasoning and baking soda. Using a fork, mix well. Add in milk, vegetable oil, corn and eggs; mix well. Stir in remaining ingredients, making sure it’s evenly mixed.

Butter the bottom and sides of a 9” x 13” baking pan. Pour mixture into pan, making sure to spread evenly. Bake at 350 degrees Fahrenheit for 55 minutes. Let cool for 30 minutes before serving. Enjoy!

Cajun Asian Fried Rice

We all have “those days” and sometimes “those weeks” where nothing you planned goes according to plan. Sometimes those days are so hectic that even figuring out what to eat is a challenge. Paradoxically, those days are usually the days that you need the food to comfort you, as well as sustain you. One of my go-to meals during those times is fried rice topped with a fried egg. What is more comforting than the luxuriousness of a runny yolk soaking into a big bowl of carbs? I throw in whatever vegetables I have and a bit of meat and something for spice, top it with a fried egg or two, and I can usually find my happy place again. So, I guess it wasn’t all bad this past week because I got to eat this fried rice twice!

I like how the smokiness of the bacon mixes with the aromatic sesame oil. The Jambalaya mix has a great slow heat that creeps up on you and the kimchi adds a bit of heat, too. I definitely recommend topping with a runny egg, but if you don’t like runny yolks then try filling an omelet with this fried rice.

**One thing about fried rice is that it’s best made with cold rice. So cook the rice the day before if possible.

Cajun-Asian Fried Rice

  • 1 Package Slap Ya Mama Cajun Jambalaya Dinner Mix
  • 2 cups water
  • 5 ounces Teet’s Slab Bacon, cut into two pieces
  • 2 Tablespoons butter
  • 1/2 cup red onion, finely diced
  • 1/4 cup carrot, finely diced
  • 1/4 cup celery, finely diced
  • 1/4 cup red bell pepper, finely diced
  • 1/4 cup cabbage kimchi (or more to taste), chopped
  • A bit kimchi juice to taste (I used about 2 Tablespoons)
  • 2 teaspoons toasted sesame oil
  • Sliced green onion for garnish (optional)
  • 4 eggs
  • Butter or oil for frying eggs


Mix the contents of the Slap Ya Mama Cajun Jambalaya Dinner Mix with 2 cups of water in a 2-quart saucepan (yes, this is different from the package instructions.) Bring to boil, lower heat to a bare simmer. Give everything a good stir, and toss in the two pieces of slab bacon. Cover. Leave it alone for 15-20 minutes and all the water is absorbed (you’re not sure how long it took because this is when you lost internet and you were in the middle of filing taxes.) Turn off heat. Fluff the rice. The bacon will get in the way, but leave it in there, replace cover and let it sit on the warm burner because all your plans were derailed and you forgot about it for another 20 minutes while you spoke to your ISP.

Thank goodness that burner was turned off.**Now, like I said earlier, fried rice is best made with cold or day old rice. So, fluff and transfer the rice into another container and refrigerate overnight (or three nights, but who’s counting.) If you want to fry the rice the same day you cooked it, fluff the rice and spread it out onto a sheet tray and let it cool. Meanwhile, take the slab bacon from the rice and trim off the rind (or keep it if you like.) Slice the bacon into lardons or slices, set aside. When the rice is cool enough that it is no longer steaming, cover loosely with plastic wrap and pop into the freezer. It should be cold enough in about an hour. Crumble the rice with your hands so it isn’t one big clump of rice. Damp (not dripping wet) hands work well for this.

**Heat a big skillet, like 10 inches or so. I’ve heard woks are good for fried rice, but I don’t own one. I use a skillet. It’s okay. It’s still fried rice even if it doesn’t come from a wok. Toss in the 2 Tablespoons of butter and melt it over med heat. Add the diced onion, carrot, celery, red bell pepper and kimchi, toss to coat everything in butter. Raise the heat to high. Let it cook for about 5 minutes. Everything is going to pick up some color and caramelize a bit. Add the crumbled rice to the skillet. Add a dab more butter and about 2 Tablespoons of kimchi juice if it seems too dry. The kimchi juice will also add a bit more heat and the jambalaya mix has some heat of its own so taste as you go. Add the bacon. Toss the rice, vegetables, and bacon. Break up any clumps of rice. I like to see the individual grains of rice and a golden brown color on the vegetables. Make sure everything is piping hot. Drizzle the sesame oil in and toss to distribute. Add the sliced green onions if using.In a separate skillet, fry the eggs in butter or oil so the whites are set, but the yolks are still runny.

Serves 4 as a side or 2 as a meal. Or one hungry Woo.

Green Bean Casserole

  • 2 lbs fresh green beans; rinsed, ends cut off & halved
  • 4 slices of bacon, chopped into ¼” pieces
  • 2 cloves garlic, minced
  • ½ large onion, chopped
  • 4 Tbsp unsalted butter
  • 4 Tbsp all-purpose flour
  • 2 ½ cups milk
  • ½ cup half & half
  • 1 tsp light brown sugar
  • 1 ½ tsp Slap Ya Mama Original Blend Seasoning
  • ½ tsp Slap Ya Mama Hot Blend Seasoning
  • 1 cup grated sharp cheddar cheese
  • 1 jar (4oz) sliced pimentos, drained
  • 1 cup dried onions


In a large pot, fill half with water, add a dash of salt and bring water a light boil.  Drop green beans in boiling water and boil for 3 to 4 minutes.  With a slotted spoon, remove from boiling water and immediately drop into a large bowl of ice water.  Once the beans have cooled, drain and set aside.

Preheat oven to 350 degrees.

In a skillet over medium heat, add bacon pieces and cook for a couple minutes.  Add onions and garlic to bacon and continue cooking for 3 to 5 minutes or until bacon is done and onions are translucent.  Remove from heat and set aside.

In a large skillet over medium heat, melt butter.  Once melted, sprinkle in flour, mix well and cook for 2 minutes.  Add in milk and half & half.  Continue cooking and mixing continuously until the sauce thickens about 5 minutes.  Add Slap Ya Mama Original and Hot Blend Seasonings, brown sugar and cheese.  Mix well and stir until the cheese melts then remove from heat.  Now combine pimentos and bacon & onion mixture into the white sauce and mix well.  In a 1 ½ quart baking/casserole dish, combine green beans and sauce mixture.  Mix well and spread evenly across dish. Top the mixture with crunchy onions and bake at 350 degrees for 30 minutes.  Serve and enjoy!

Healthy Sweet Potato & Veggie Bake

Introducing our new recipe – the Healthy Sweet Potato & Veggie Bake. It combines all your healthy vegetables with assorted toppings and Slap Ya Mama’s original blend seasoning to deliver maximum flavor.


  • 2 sweet potatoes, ½” cubes
  • 1 zucchini, quartered ½” pieces
  • 1 yellow squash, quartered ½” pieces
  • 1 medium red bell pepper, chopped
  • 1 garlic clove, sliced
  • 1/3 cup breadcrumbs
  • ¼ tsp rosemary, chopped
  • 2 ½ tbsp. olive oil
  • 1 tsp Slap Ya Mama Original Blend Seasoning


Preheat oven to 400 degrees F.

In a medium baking pan toss together sweet potatoes, zucchini, squash, red bell pepper, garlic, breadcrumbs, rosemary and olive oil.  Season with Slap Ya Mama Original Blend Seasoning.  Bake for 1 hour, stirring occasionally until potatoes are tender.  Serve and enjoy!

Slap Ya Mama Sweet and Spicy Pulled Pork Soft Tacos

Preheat oven to 300 degrees.

Rinse and dry pork roast and place in a dutch oven.  In a food processor combine onion, Slap Ya Mama seasonings, brown sugar, garlic cloves, oregano, olive oil, and vinegar.  Pulse until completely combined.  Pour the mixture over the pork.  Rub into all the nooks and crannies.  Add 1 1/2 cups water around the bottom of the pork roast, cover tightly and roast for at least 5 hours, turning over every hour.  Check to make sure roast is fork tender, then shred the meat using two forks to help pull it apart.  I kept the meat in the juices so it would stay moist.

Serve pork on warm flour tortillas and add your favorite toppings.  I used our favorite salsa, shredded cheddar, sour cream, fresh diced tomatoes and it wouldn’t be the same without squeezing fresh lime wedges over the top!  Enjoy!

Fried Red Beans & Rice Balls

Fried Red Beans & Rice Balls




Prepare the Slap Ya Mama Red Beans & Rice as directed on the back of the box.  Place the cooked Red Beans & Rice into the refrigerator until cold.  By having the red beans and rice cold, it helps make the “balls” easier to form.  Once the red beans & rice are cold, using your hands, form/mold the red beans and rice into balls that are a little bigger than golf ball size and set aside.  Pre-heat your oil to 375 degrees.  Crack your egg into a bowl and scramble to create an egg wash.  With your fish fry batter in a large bowl, roll your Red Beans & Rice balls in the batter until they are entirely covered with batter.  Then dip each ball in your egg wash, covering the ball with egg wash and place back into the fish fry batter and cover again with batter.   Carefully drop your red beans and rice balls into the oil and fry for about 4 ½ minutes or until golden brown.  You can enjoy them by themselves or you can create our Slap Ya Mama dipping sauce, either way, enjoy.
