Ingredients
12 12 whole blue crabs (cleaned, live, or freshly steamed)
Optional:touches of soy sauce or Worcestershire sauce for seasoning mix
Instructions
Prepare the Crabs and Seasoning Mix
Prep the crabs: If using live crabs, clean them by removing the top shell and lungs. Discard the lungs but reserve the top shell with innards intact
Make the basting sauce: In a medium saucepan over low heat, combine 1/2 lb melted butter, 1 cup Jack Miller’s Cajun Bar-B-Q Sauce, 2 tbsp Slap Ya Mama Cajun Hot Sauce, and the juice of 1 lemon. Stir until well blended. Optionally, add a touch of soy sauce or Worcestershire sauce for extra depth. Keep warm.
Season the crabs:Sprinkle the cleaned crabs liberally with 2 tbsp (or more) Slap Ya Mama CajunSeasoning on all sides, ensuring even coverage
Grill the Crabs
Preheat grill: Preheat a grill to medium-high heat (375–400°F).
Grill crabs: Place crabs shell-side down directly on the grill grates. Spoon or brush a portion of the seasoning mix into the inner cavity of each crab, then cover with the reserved top shell. Grill for 6–8 minutes.
Add more sauce: Remove the top shells, brush or spoon additional seasoning mix over the crabs, and grill for an additional 5 minutes, or until the crabs are red and cooked through
Finish and Serve
Finish with lemon: Just before removing from the grill, squeeze fresh lemon juice over the crabs for a bright finish.
Garnish and serve: Transfer the crabs to a large platter. Garnish with sliced green onions, if desired. Serve hot with extra Jack Miller’s Cajun Bar-B-Q Sauce for dipping and lemon wedges on the side.
Crab preparation: If unfamiliar with cleaning live crabs, consider purchasing pre-cleaned or steamed crabs to save time. Ensure crabs are fresh for the best flavor.
