Ingredients

Pudding

  • 1 cup sugar
  • ½ cup all-purpose flour
  • ¼ tsp kosher salt
  • 3½ cups whole milk, divided
  • 8 egg yolks
  • 1 tbsp unsalted butter
  • 1½ tsps  vanilla extract
  • 1  box vanilla wafers
  • 6  bananas, sliced
  • Kiss Ya Mama Cinnamon Sugar

Meringue Topping:

  • 8 Egg whites leftover from pudding
  • 1 cup sugar

Instructions

Prepare the Pudding:

  • In a medium bowl, whisk together 1 cup sugar, ½ cup flour, and ¼ teaspoon kosher salt
  • Whisk in ½ cup whole milk and 8 egg yolks until smooth.
  • In a large saucepan, bring the remaining 3 cups of whole milk to a simmer over medium heat, stirring frequently.
  • Gradually whisk 1 cup of the hot milk into the egg mixture.
  • Whisk the egg mixture back into the saucepan with the remaining hot milk.
  • Bring to a boil over medium heat, stirring constantly. Cook for about 3 minutes until thickened.
  • Remove from heat and stir in 1 tablespoon unsalted butter and 1½ teaspoons vanilla extract. Let cool for 10 minutes, stirring occasionally.

Assemble the Banana Pudding:

  • In a 13×9-inch baking dish, arrange a layer of vanilla wafers.
  • Top with sliced bananas and spread the pudding mixture over the bananas.
  • Sprinkle a layer of Kiss Ya Mama.
  • Add another layer of banana slices.
  • Prepare the Meringue:
  • In a clean bowl, beat 8 egg whites on medium speed until foamy. Gradually increase to high speed.
  • Gradually add 1 cup sugar, one tablespoon at a time, beating until stiff, glossy peaks form.

Finish the Pudding:

  • Spread the meringue over the assembled pudding.
  • Bake at 350°F for 10 minutes until the meringue is golden
  • Cover and refrigerate for at least 2 hours, or serve warm
